Recently made the beef cheek ravioli. The shredded carrot in the tomato sauce is such a nice addition.

With my home-cured guanciale this was definitely not a problem, although I sliced it very thin by hand. The guanciale became light brown when cooked with the onions, garlic and red pepper flakes. I’ve never seen anything I’d rather eat more of than what’s in this book. Today is just the pasta, but I plan on making more than enough for at least 3 dishes for Adam and I. I’ve had this book on my wish list for awhile. Then I let them dry in my spare fridge for about a month.

They are really addictive and take little time to make. Here for the first time he babvo such signature dishes as Mint Love Letters with Spicy Lamb Sausage and Beef Cheek Ravioli, all showcasing his unparalleled ability to reinterpret the Italian culinary tradition in a completely original way.
Mario has been a more active racing fan these last few years, hosting prerace dinners at the track for the drivers. I had forgotten what marjoram tasted like and it’s phenomenal with lobster – herbal with citrus undertones, but delicate at the same time.
Then it was simmered in the tomato sauce I used the tomato sauce recipe from Babbo which is my go-to recipe. One other interesting thing about the book is that he mentions rhubarb being a ‘nostalgic childhood memory’, and I gabbo agree. Apaprently, Mario leaves out the “secret touches” that make his dishes soar cookbopk Babbo; nevertheless, the book is beautiful and msot of the recipes appear very doable.
